Vegan Egg Nog

Being dairy free doesn't mean I have to miss out on any holiday treats.  This recipe tastes like Christmas, and it's guilt free!Ingredients:1.5 cups raw, unsalted, cashews, soaked overnight and drained2 cups water1 can (13.5oz) full fat coconut milk2 Tbsp honey14 small dates, pitted1 tsp ground nutmeg1/4 tsp kosher saltcinnamon for garnishDirections:

  1. Blend soaked cashews and 2 cups of water until very smooth. (do not use soaking water)
  2. Add the remaining ingredients and blend until consistency is achieved.  This will require some time, as the dates take a great deal of blending.  It's ok if the liquid gets warm to the touch.
  3. Pour eggnog into a glass container and refrigerate until cold.
  4. Sprinkle cinnamon on top and serve.

makes approximately 4 servings
