Hearty Bean SoupIngredients2 lbs. sweet corn1 red bell pepper1 package cherry or other small tomatoes1/2 red onion1 can (15 oz.) pinto beans1 can (15 oz.) black beans1 can (15 oz.) garbanzo beans1 can (32 oz) stewed tomatoes1 tbsp. celery seed1 tbsp. garlic powder1 tbsp. onion powder2 vegetable bouillon cubes8 cups vegetable broth2 cups cooked brown riceCelery salt and pepper to taste2 tsp. olive oilCrock Pot Directions
- Follow steps 1 and 2 below.
- Place everything in a large crock pot.
- Cook on low for 5-7 hours.
Stove Top DirectionsStep 1 – Clean and prepare all vegetables and rice to your liking.Step 2 – Saute the onion in the olive oil over low heat until the onion is wilted and translucent.Step 2 – Combine all ingredients in one large soup pot.Step 3 – Cook until piping hot.Step 4 – Serve.
