Kale Chips? Yes Please!

We got our first CSA share of the season! I knew there would be kale in the box, and the first thing I wanted to try was kale chips. I've heard good things, but was skeptical. We used a basic recipe and just made a little to try it out. Let me just say, they were delicious! My 8 year old son asked for more!While the texture is kind of flaky and delicate, there is definite crunch! These can fulfill my salty craving with much lower calories than potato chips, all while getting the benefits of the dark leafy greens. It's a keeper!Ingredients:Fresh kale leaves, broken into smaller piecesKosher or sea salt, to tasteAny seasoning and/or cheese of your choice (we used parmegiano/regiano cheese)Directions:1. Preheat oven to 375 degrees. Wash kale and pat dry. Break up the leaves a little, but not too small as they shrink.2. Lightly drizzle with olive oil and sprinkle with cheese or seasoning of your choice and kosher salt.3. Bake for 10-12 minutes or until crisp and light brown on edges. Serve immediately.We also ate all of the strawberries from our box in one sitting! :) I love spring!
